1 TB coconut oil
1 package frozen shredded vegetables, cooked per package directions
1 lb hot pork sausage
1/2 cup mushrooms, diced
1/3 cup shredded cheese (we use dairy free slices)
Thyme, parsley, salt, and pepper
Heat coconut oil in skillet
Cook shredded vegetables per instructions (I use microwave steam bag)
Brown sausage in coconut oil. Add mushrooms and cooked vegetables.
Whisk in 4 eggs and top with cheese.
Sprinkle with parsley, thyme, salt, and pepper. Cover and cook until eggs are set.
