Oven Roasted Chicken and Veggies

Oven Roasted Chicken
1 frying chicken without giblets
1 red onion
2 TB McCormick rotisserie chicken seasoning
2 TB grapeseed oil
2 cups baby carrots
2 Japanese sweet potatoes
Seasoned salt, pepper, and thyme
Stuff chicken with red onion and rub with seasoning.
Place vegetables around chicken and drizzle all with grapeseed oil.
Cover and refrigerate for 4 hours.
Preheat oven to 250 degree.
Roast chicken and vegetables uncovered for 4 hours
