Cashew Chicken and Veggies


Cashew Chicken and Veggies

in a skillet, heat over medium high:

1 TB sesame oil

1 TB Ghee


Add 6 chicken tenderloins

Salt and Pepper, Cook through


While cooking, toss a bag of frozen veggies in the microwave and cook as directed. I used California blend.


Dice the chicken into small pieces and add veggies to the skillet. Add 1 tsp minced garlic and 1 tsp minced ginger. Drizzle 1 TB soy sauce or coconut aminos over the top and mix to combine.


Pulverize 1/3 cup cashew in a chopper (or attack with mallet in a baggie)


Add half the cashew to the skillet, reserving the rest for over the top when serving.


Toss and let cook for another few minutes, then enjoy!
