I call this a surprise because it is never the same twice!
It ends up being a conglomeration of whatever protein and fresh veggies I have that I need to use up, and it works every. single. time.
You can also use any spice combination based on what you are in the mood for!
If you want more bulk, serve it over rice (white, brown, or cauliflower) Sprinkle it with cheese....for real. The possibilities are endless!!!
1 butternut squash
1 yellow pepper
1 cup baby carrots
1 cup radishes
1 lb turkey breakfast sausage, raw but crumbled
3 TB (approx) grapeseed oil
3 TB (approx) ghee
seasoned salt and pepper
Preheat oven to 425 degrees (F)
Place all ingredients in a large mixing bowl and toss to coat evenly.
Distribute evenly on one or two sheet pans.
Bake for 30 minutes.
