Denver Omelet Egg Bites

Denver Omelet Egg Bites

Preheat oven to 375 degrees.

Prepare two cupcake pans with cooking spray.

Whisk in a large bowl:

8 eggs

1 TB sour cream

1/4 cup shredded cheese

1/4 cup diced onion

1/4 cup diced green peppers

1/2 cup chopped ham (great way to use up leftovers!)

Salt and pepper

Distribute between 18 cupcake molds. (About 2/3 of the way full)

Bake for 20 minutes
