Curry Chicken Salad

Recipe adapted from Revelation Wellness "Weight Loss God's Way" Challenge January 2020

3 Cups shredded chicken breast (I make mine in the crockpot with rotisserie seasoning)

1/4 cup white onion

2 hard boiled eggs (chopped)

1/3 cup mayo ( I use primal kitchen avocado mayo)

1/2 tsp dried dill

1/2 tsp curry powder

1/2 chopped apple (we like honeycrisp)

Combine all ingredients in a large bowl and stir well, chill before serving

We like this over spinach with avocado slices, sliced boiled egg, mixed nuts, and cheddar cheese. For dressing, we use a mix of balsamic vinegar, avocado oil, dijon mustard, and stevia
