Chocolate Protein Muffins


Ingredients

2 cups oats

1 cup chocolate protein powder (I use Vega)

8 oz unsweetened applesauce

2 eggs

1 cup coconut milk (I use Califia toasted coconut)

1 tsp vanilla extract

1/3 cup cacao powder

1/4 cup swerve baking blend

1/2 tsp baking powder

1/3 cup stevia sweetened chocolate chips (Lily's or Russell Stovers)


Instructions

Preheat oven to 350F

Line a muffin pan with 12 muffin liners (or grease it).

Turn 1 cup oats into a fine flour using a food processor or blender (about 1 minute).

Pour your newly made oatmeal flour into a large mixing bowl and add the rest of the ingredients. Stir well.

Divide the batter equally among the 12 muffin tins.


Bake for 18-20 minutes. Remove from oven when a toothpick inserted in the center of a muffin comes out clean.

Remove the muffins from the muffin pan after they cool in the pan.
