Balsamic Shrimp Pasta

You can easily swap out the shrimp for another protein in this one!

Balsamic shrimp pasta

8 oz gluten free pasta

2 small cans V8

1 can chicken broth

I bunch asparagus

1 cup cherry tomatoes

1/2 onion

10 leaves fresh basil, chopped

1/2 Tb minced garlic

Old Bay Seasoning

1 cup small raw shrimp

1/4 cup EVOO + 2TB

1/4 cup balsamic vinegar

Pinch stevia

Bring V8 and chicken broth to boil, add pasta and cook according to package directions

Remove pasta when done but reserve liquid. Add 1/4 cup EVOO, 1/4 cup balsamic vinegar, and pinch of stevia to liquid. Bring to boil and reduce to simmer to reduce.

Heat 1Tb EVOO in skillet and add 1/2 Tb minced garlic. Cook until fragrant.

Add vegetables and basil, cook for 5 minutes.

Remove vegetables from skillet and add 1 TB EVOO and shrimp, sprinkled with Old Bay Seasoning. Cook until pink.

Add vegetables and pasta back to skillet with shrimp. Toss and heat through. Coat with balsamic glaze.
